As fans of Midrange Hunter, we couldn't be happier to see the class, let alone the archetype being played to some success once again. Jeweled Macaw and Stampede are a substantial part of that as Hunter has long struggled with card draw. As it turns out, simply filling your hand with more Beasts is usually enough to get you a win in situations where you'd otherwise lose. But what are the odds that you actually get something good from them and on average how many times will you be able to capitalize on Stampede?
There is a total of 67 Beasts in Year of the Mammoth's new Standard meaning there are a ton of possibilities to take into account.
According to this spreadsheet and table by cgmcnama, you're going to get a 1-Cost minion almost 20% of the time which is great when you want to keep chaining the Stampede value late in the game. Expanding that criteria a bit, you're likely to get a minion that costs three mana or less more than half of the time you get a random Beast - that's 57% of the time if you don't feel like doing the math.
As a whole, you should expect to get a 3.84 mana 3/4 that likely has either Charge, Taunt, Deathrattle, or a Battlecry. There's a 61.2% chance that it has at least one of those keywords, but don't go looking for any Spell Damage, the current Beasts are devoid of the feature.

It's hard to define "best" as it largely depends on what type of game you're in and what turn it is. A Tyrantus on Turn 1 from Jeweled Macaw does you no good if you die before that point. For that reason, we'll simply be listing the best minions at each mana cost.

There are plenty of cards you're going to want to avoid when getting a random Beast. Emerald Hive Queen is downright counterproductive when you're trying to summon a stampede. Others like Silithid Swarmer are unlikely to be able to attack, but once you get to the 5-Cost minions it's really hard to get a "bad" minion. If you're looking for minions at that cost, generally anything is better than some of the lower cost minions. By no means is Giant Sand Worm a terrible card in the late game and you have nothing else to play.
